Bar Corso Weekly: The Drive’s Winter Warm-Up

Commercial Drive has officially hit the point in winter where everyone walks around like they’re starring in a gritty Vancouver reboot of The Sopranos. Cold, wet, slightly annoyed — but hungry for something good.

Lucky for everyone: this is exactly when Bar Corso does its best work.

What’s Happening This Week

The kitchen is leaning into comfort. Chef’s been running a tighter, more flavour-forward pasta lineup: slow-cooked ragùs, bright gremolata hits, and a risotto that refuses to apologize for being rich. It’s winter — embrace it.

Amaro season is in full sprint. If there were ever a time to sip something bitter and brooding, it's now. Mika’s been rotating a few deeper cuts from the collection — ask for a recommendation, and she’ll happily flex.

The room feels good right now. Cozy lighting, relaxed pacing, and a vibe that quietly says: “Yes, you deserve a night out. And no, you don’t need a special occasion.”

Why This Week Matters

January/February is when most restaurants start gasping for air. Not us. We lean in. This is when regulars become regulars, and when new guests realize the Drive has more going on than pizza-by-the-slice and kombucha experiments.

If you haven’t dropped in recently, now’s the time. Bring a friend. Bring a date. Bring someone who thinks they know Italian food and watch them get humbled in real time.

See you at the bar.
