Bar Corso is more than a nod to Italian culture — it’s a living thread in the rich tapestry of Commercial Drive.

Born from the passion and heritage of three Italian families, Bar Corso weaves together generations of tradition, hospitality, and a deep love for food and community. What began as a shared dream among friends and relatives has grown into a modern-day Italian bar — a gathering place where espresso meets conversation, and cicchetti (Venetian tapas) pair with rare amari, curated wines, and classic cocktails.

Tucked into the heart of Vancouver’s Little Italy, Bar Corso feels like home to those who know the warmth of an Italian kitchen — and an open invitation to those who don’t. Whether it’s an espresso or a Negroni at the bar, a glass of grappa after dinner, or a few shared plates with friends, Bar Corso is where stories are told and community is built — just as it should be.

Luke Boswell

With more than 16 years of experience in kitchens across Europe, Asia, and Oceania, Luke Boswell brings a world of culinary influence to Vancouver’s Bar Corso. His work in the UK, France, Italy, Greece, Cyprus, Sweden, Germany, Australia, New Zealand, Singapore, and Canada has shaped a chef whose style is worldly yet deeply personal.

Luke’s cuisine reflects Bar Corso’s ethos: modern Italian rooted in tradition, inspired by global experience. His menus celebrate sustainability and seasonality, allowing local ingredients to speak for themselves. Every dish is designed for sharing — an expression of Italian dining culture and the convivial spirit at the heart of Corso.

His journey began in the kitchens of his father and great-grandmother, where he first discovered a love for honest, soulful cooking. That early spark continues to guide him as he reimagines Italian cuisine for today’s Vancouver while preserving the heritage that defines Bar Corso’s vision.
